Easy (4 Step) Yogurt & Olive Oil “Pound” Cake

 

[Lighter] Olive Oil and Yogurt Pound Cake. What a great friend for berries and cream during the summer.

After spending the week in Florida, enjoying the cooler weather (compared to the rest of the country right now), I am now in Kentucky. Although I am glad to be back with my beloved local co-op grocery store, as well as the best local milk I’ve ever tasted, the place I am staying at doesn’t have internet yet, so I am currently at one of my local favorite local establishments that has internet and one of my favorite beverages that I found in France, a Monaco, woot.

Gather your ingredients (as always, I forgot something -the yogurt).

Mix wet and dry ingredients in two different bowl, then combine. Batter will be a bit thick.

Spread batter into prepared pan and bake. Voila!

Yogurt Pound Cake
Adapted from Bake Me Something Good

1 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
3/4 cup plain greek yogurt
1/4 cup olive oil
2 eggs
1 teaspoon vanilla extract
1 teaspoon butter extract

Mix dry ingredients (flour, baking powder, salt, and sugar) in a large bowl.
In a medium bowl, whisk together remaining ingredients.
Stir wet ingredients into dry until just combined.
Bake in a greased and floured 8×4 loaf pan for 45-55 minutes in an oven preheated to 350.
